Trip to Xunanuntich!

Our second day in Belize was super exciting!  We woke up at the hotel and had a nice breakfast.  I had a ham and cheese omelet.  And these amazing little things called fry jacks.  It's basically fried dough.  It is amazing.  I dipped mine in a little syrup, and would have been perfectly content to eat fry jacks only for breakfast!  The coffee is really good....but since that's coming from a person who does not usually drink coffee, I think it's because it's weak and I add tons of creamer and sugar.

A friend of Dr. Kemppainen's who works at the University of Belize recommended a driver for us named Mr. Russell.  Dr. K called Mr. Russell and Mr. Russell assured him he had plenty of room in his van to transport eight of us an hour away to Xunanunich.  Well, he lied.  He pulled up in a seven-seater mini van.  Three girls piled in the back, three in the middle, Dr. K up front, and I sat on the floor, which was actually probably the best seat in the van!  After an hour of bumping over dirt roads and MASSIVE speed bumps (the back of the van scraped each time), we finally arrived at Xunantunich.

  1. So typical of cab drivers in places like Belize!! It makes for better stories though ;) I am loving looking at these pictures! Quite jealous actually!!! LOL
